What are the differences between having a totem and identifying as non-human?
Can you only identify as partially non-human and still be considered a therian? What is the difference between feeling you ARE something and feeling 'kin' to something?
how can you figure out if you are part something, or if you just have a totem due to spiritual experiences you have had with animals in real life?

Therians identify as nonhuman. Having a totem refers to an animal that represents you (or your family) in a symbolic way; may or may not have a connection with it.
A therian's theriotype is internal, a totem is external.
Being a therian is part of your idneity, being a totemist is a belief system.
Two rather different things and experiences.
For figuring out if one is therian or not, one needs to question if they identify as human or not and if not what they identify as. For figuring out totems - there are loads of books and stuff out there due to it being a beleif system.
